Warming Cauliflower and Sweet Potato Coconut Curry

We all love curry, right? It comes in so many varieties. Spicy or mild; meaty or veggie; sweet and tangy. Even nutty. Not forgetting all the yummy accompaniments you can add. Curry has something for everyone and my vegetarian recipe for cauliflower and sweet potato coconut curry is no exception.

This curry is packed with flavour so it’s really satisfying. It’s dreamy creamy from the coconut milk whilst remaining light and fragrant. The beauty of curry is you can make it as spicy as you like. My husband enjoys a fiery curry but if that’s not for you add less of the green chilli.

Serves: 4

Ingredients:

1 small cauliflower broken into bite-size pieces.
1 onion chopped.
1/2 a sweet potato peeled and cubed. 1/2 pint veggie stock.
2 tomatoes chopped.
Clove of garlic chopped.
1-1/2  large hot green chillis.
200g of tinned chickpeas.
1tblsp of coconut oil.
1/2 cinnamon stick.
1 tbsp ground coriander.
1-1/2 tsp cumin.
3/4 tsp ground turmeric.
1/2 tsp cayenne.
1/2 tsp of black pepper.
400ml of coconut milk.

How to make Lou’s warming cauliflower and sweet potato coconut curry:

🌶️ Add the coconut oil, on a medium heat fry the onion until translucent.

🌶️Add the spices and the cinnamon stick, stir in releasing all the flavours for about a minute.

🌶️ Stir in the chilli and garlic.

🌶️Add the tomatoes and sweet potatoes, plus the stock, followed by the coconut milk.

🌶️Simmer gently for 15 minutes until the vegetables are soft.

🌶️Add a squeeze of lemon or lime just before serving.

🌶️Get stuck in.

Serving suggestion:

Serve with rice, chapati or couscous. Have bowls with wedges of lime, chopped coriander and fresh red chillis. If you need to cool it down, natural yoghurt with finely sliced cucumber and mint makes a lovely addition.

Storage:

Best eaten fresh but will keep for up to 3 days in a sealed container kept refrigerated.
